Cleaning and Care

Everything you need to keep cast iron, enameled cast iron, carbon steel, and stoneware in peak condition.

Cast Iron

Wash with hot water and a stiff brush, dry completely, and oil lightly after every use. Full instructions are in How to Clean Cast Iron.

Enameled Cast Iron

The enamel coating means you can use mild dish soap and a soft sponge. Avoid metal utensils and abrasive cleaners, and never heat an empty enameled pan. Let it cool before washing.

Carbon Steel

Treat it like cast iron: quick wash, immediate dry, thin oil. Carbon steel seasons faster and is lighter, so it heats and cools quickly.

Stoneware

Hand wash in warm water with mild soap, and avoid thermal shock — do not move stoneware straight from the freezer to a hot oven.

Storage

Stack pans with a protector or a paper towel between them, and keep them dry. A cookware organiser or storage tower keeps the whole collection within reach.
