Cast iron works on every heat source there is, but each one asks for a slightly different approach.
Gas
The easiest match. Preheat over medium, rotate the pan occasionally for even browning, and use the burner size closest to the pan base.
Electric Coil and Ceramic Glass
Heat is slower and more localised. Preheat longer at a lower setting and lift the pan rather than sliding it, so you do not scratch a glass top.
Induction
Cast iron is ferromagnetic, so it heats quickly and evenly. Reduce the setting by about a third compared with gas.
Oven and Broiler
Cast iron is oven safe to 500°F (260°C) and moves from stovetop to oven without a second pan. Broiler-safe too — just keep the handle covered.
Grill and Open Fire
Perfect for camp cooking and live fire. Always use a lid lifter or heat-resistant gloves, and never set a hot pan on a cold or wet surface.
Microwave
Never. No metal in a microwave, ever.
